Summer is coming to an end soon. In a few weeks, we'll see temperatures drop and pumpkin spice lattes will be everywhere. There, there, don't cry! I have just the thing to turn that frown into a lip smackin' smile!
First, let me say that there are few things I love more in this world than Mexican food. I mean to say I have a craving for chips, cheese, and salsa at least bi-weekly. So what better way to use up some of the last of summer's juiciest peaches than the add them to the heavenly creation that is, salsa!
- 2 peaches, peeled and cut into bite sized chunks
- 2 serrano chilis, seeded and finely chopped
- 1 avocado, chopped into bite sized chunks
- Zest of 1/2 lime
- Juice of 1 lime
- 1/2 medium red bell pepper, finely chopped
- 3 stalks green onion, finely chopped
- Salt and pepper
Toss together the peppers, peaches, lime zest, and green onion and stir to mix. Next, sprinkle in some salt and pepper, followed by the avocado and the lime juice, gently tossing to distribute flavors but being careful not to mash avocado chunks.
Beautifully plate your delicious peach salsa and wow your friends and family with your kitchen abilities. OR devour immediately.
I also recommend serving this over grilled tilapia or grouper filets. It is my favorite way to enjoy fish!
